Position Summary
Kendwa Rocks Beach Hotel is seeking an exceptional Head of Food & Beverage to lead one of the largest and most dynamic departments within the hotel. The successful candidate will have overall responsibility for the strategic direction, financial performance, and daily operation of all food and beverage outlets, including restaurants, bars, beach service, room service, events, banqueting, and the hotel's internationally recognised Full Moon Party. This senior leadership role requires a commercially driven hospitality professional capable of delivering exceptional guest experiences while maximizing profitability, improving operational efficiency, and developing high-performing teams.

Key Responsibilities
- Lead, recruit, train, and develop the entire Food & Beverage department.
- Oversee daily operations across all restaurants, bars, beach service, room service, and events.
- Maintain exceptional food, beverage, and service standards.
- Take ownership of bar operations, including cocktail development, wine programme and beverage profitability.
- Lead all F&B operations for weddings, conferences, corporate events, Rocks Club, and Full Moon Party.
- Develop seasonal menus and work closely with the Executive Chef on menu engineering.
- Prepare and manage budgets, forecasts, food and beverage costs, and departmental profitability.
- Oversee procurement, supplier relationships, and inventory control.
- Ensure outstanding guest satisfaction and personally resolve major guest concerns.
- Implement staff training, leadership development, and performance management.
- Maintain compliance with food safety, hygiene, and occupational health regulations.
- Work closely with Marketing on promotions and signature experiences.
- Prepare operational and financial reports for senior management.
- Coordinate effectively with Front Office, Finance, Housekeeping, Maintenance, HR, Security, Reservations, and Events.

Qualifications
- Minimum 5 years' experience in a senior Food & Beverage management position within a reputable hotel, resort or high-volume hospitality venue.
- Experience managing multiple restaurants and bars.
- Strong financial and commercial understanding.
- Excellent leadership and communication skills.
- Computer literacy including Microsoft Office.
- Excellent written and spoken English.
- Bachelor's Degree in Hospitality Management or related field preferred.
- Experience with Opera PMS, Micros POS and inventory management systems is advantageous.
